Abstract: Whilst modern systems of food safety management originated and developed in the latter half of the 20th century, the concept of food safety culture is a much more recent development within the last 10 years. Globally, food safety culture is one of the key topics of the moment for food businesses, yet there is much misunderstanding about what food safety culture actually is and confusion about what food businesses should be doing to strengthen their operations.

This presentation aims to set the scene by discussing the essentials of food safety culture for food businesses and updating on current international research efforts to provide information and guidance towards stronger food safety culture. By examining cultural failures in food outbreaks and incidents the presentation will explore the lessons we must learn such that we can verify that businesses have the necessary level of hazard and risk awareness and that this is applied effectively through employee engagement. It will explore the important linkages between food safety systems, risk management practices and culture and how these need to work together to design effective approaches related to food safety priorities and improvement of food safety performance.
