The Faculty of Agriculture of the University of Mauritius has been championing a “FOOD LOSS AND WASTE REDUCTION & RECOVERY” Initiative from February 2018-June 2019. It is now involved in an EU funded project DeSIRA (Development-Smart Innovation through Research in Agriculture) and the Work Package 3 focusses on activities relating to food loss and food waste reduction. In the context of the International Day of Awareness on Food Loss and Waste on 29 September 2023. the Faculty of Agriculture organized the launching of a recipe book entitled ‘Valorising Food Leftovers and Imperfect Fruits & Vegetables-a compilation of 45 original recipes’ by the Acting President of the Republic of Mauritius, Mr Marie Cyril Eddy Boissézon and the First Counsellor of the European Union (EU) delegation to the Republic of Mauritius, Mrs Florence Van Houtte. The recipe book was developed by the research team (Assoc Professor Daya Goburdhun, Assoc Professor Arvind Ruggoo, Dr Deena Ramful Baboolall, Dr Roshini Brizmohun Gopaul and Miss Lakshaya Beeharee as trainee project assistant) in collaboration with chefs and individuals passionate about cooking but concerned about food waste.
